Crunchy Keto Berry Mousse

Ingredients

  • 2 cups of heavy whipping cream
  • 3 oz. of fresh raspberries or fresh strawberries or fresh blueberries
  • 2 oz. of chopped pecans
  • Zest of ½ lemon
  • ¼ teaspoon of vanilla extract

Instructions

  1. Transfer the cream into a bowl and whip using a hand mixer until it forms soft peaks. Then add in vanilla and lemon zest and continue whipping.
  2. Add in the nuts and berries to the cream and combine.
  3. Cover the mixture with a plastic wrap and transfer to the refrigerator to chill for about three hours. This will give it a firm consistency. You can also serve immediately.
