CAULIFLOWER CHEESY BACON CASSEROLE

Ingredients
- 20 oz. frozen cauliflower or medium head
- 3 oz. softened cream cheese
- 2 tbsp. butter
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 2 oz. heavy cream
- 4 slice bacon, cooked & crumbled
- 8 oz. grated cheddar cheese
Instructions
- Preheat oven to 375 F.
- Steam or cook cauliflower until tender.
- Drain well.
- In another pan, add heavy cream, butter, cream cheese, crumbled bacon and 6 oz of the grated cheese.
- Stir continuously until melted and thoroughly combined.
- Add drained cauliflower to a casserole dish and pour cheese mixture over.
- Cover and bake for 15 minutes.
- After 15 minutes, uncover and add the rest of the grated cheese.
- Let bake for 5 more minutes or until golden brown.
