We are big pizza fans over here! There is nothing better than starting the weekend off right with Friday night pizza. Being on keto put pizza Fridays on hold until we tried cauliflower pizza crust. Cauliflower crust pizza is the ultimate substitute! It is low in carbs and fits perfectly into the keto diet. Paired with a homemade tomato sauce. There’s no need to give up the things you love!
Cauliflower Pizza Crust

Ingredients
- 1/2 head of cauliflower(cut into florets)
- 1 egg(beaten)
- 50 grams parmesan cheese(grated)
- Olive oil spray
- 1/2 clove of garlic
- A pinch of chili flakes(optional)
- 250ml of tomato sauce
- A handful of basil(cut)
- 1/2 ball of thinly sliced light mozzarella
- Handful of kale leaves
Instructions
- * Heat the oven to 350 degrees.
- * Cook the cauliflower for 4 minutes in boiling salted water, then drain well. Once cooled, pat with a kitchen towel to dry completely, and transfer to a food processor.
- * Blend well until it resembles couscous.
- * Mix in egg and parmesan to the blended cauliflower
- * Spread mixture onto a lined baking sheet, sprayed with oil and press into a pizza base shape using a spatula. Bake for 15-20 minutes until it is golden and feels firm.
- * While the crust is baking, fry the garlic and chilli in olive oil for a minute before adding the tomato sauce.
- * Simmer and reduce until thick and spreadable. Add the basil and season.
- * Spread the tomato sauce over the base then add the slices of mozzarella.
- * Put back in the oven for 10 minutes until the cheese has turned golden. Scatter with rocket or baby kale.
