One of the hardest things to give up when you are on the keto diet is potatoes. Coming up with side dishes can be difficult but we have perfected the cauliflower mashed to replace your mashed potatoes. When paired with meat, you can make a good gravy by using xanthan gum to thicken up any drippings from the meat.
This goes well if you are making roast turkey or roast chicken.
Add some bacon bits, chives and cheese of your choice to turn this into a loaded mashed cauliflower side.
CAULIFLOWER MASH

Ingredients
- 3 lbs. cauliflower
- ¼ c paleo mayo
- ¼ c ghee or make your own
- ½ tsp Himalayan salt
- ¼ tsp ground white pepper
- generous grating nutmeg
Instructions
- Place the cauliflower florets into a steam basket.
- Cook over salted boiling water until tender, about 8 to 10 minutes.
- Remove from heat and let cool slightly.
- Squeeze water from cauliflower and transfer to food processor.
- Add the mayo, ghee, salt, pepper and nutmeg and process until smooth and creamy.
- Serve piping hot with a little dollop of ghee and chopped herbs.
