If you miss potato salad, here’s a low-carb version made with cauliflower that tastes just as great. If you want a little variety, you can add hard boiled eggs. You can also substitute broccoflor, which is a hybrid of cauliflower and broccoli for even more variation.
You can make this for a cookout or to have as a delicious side dish that goes with just about anything.
CAULIFLOWER POTATO SALAD

Ingredients
- 1 medium head cauliflower, broken into small florets
- 1/4 C mayonnaise
- 2 tablespoons lemon juice
- 2 packets sugar substitute
- 1/2 teaspoon dried mustard
- 3 green onions, chopped
- 1 very finely chopped jalapeno pepper or 2 tablespoons chopped green bell pepper
- Salt and pepper
Instructions
- Cook cauliflower in a large pot of boiling salted water 10 minutes, until tender.
- Drain and rinse under cold water and then pat dry.
- In a large mixing bowl, mix mayonnaise, lemon juice, sugar substitute, and mustard.
- Add cauliflower, green onion and pepper, if using.
- Mix well until vegetables are evenly coated with dressing.
- Add salt and pepper to taste.
- Chill 30 minutes for flavors to blend
