Here’s a recipe for your air fryer that you are going to be making all the time. This makes the perfect snack for Sunday games or for a quick and easy hors d’oeuvre. Instead of using panko or regular breadcrumbs, this recipe calls for crushed pork rinds for your coating.
If you don’t have an air fryer, simply fry the coated shrimp in a pan with at least two inches of olive oil in it. If you use frozen shrimp, you just need to make sure they have been completely thawed and dried. If you use shrimp that is pre-cooked, it could get tough and chewy since they have already been cooked.

Ingredients
- 1 lb. shrimp, peeled and cleaned
- ¾ cup of coconut flour
- 1 tsp. of onion powder
- 1 tbsp. of garlic powder
- 2 eggs, lightly beaten
- ½ cup of pork rind crumbs
- ½ cup of coconut flakes, unsweetened and shredded
- Kosher salt and fresh pepper to taste
- Avocado oil as desired
Sriracha dipping sauce
- ½ cup of mayonnaise
- ½ tsp. lime juice
- 1 clove garlic, finely grated
- 2 tbsp. of hot sauce or sriracha
Instructions
- Preheat the air fryer to 390 degrees F.
- Using a large mixing bowl, add in the coconut flour, onion powder, garlic powder, ½ teaspoon salt, and some cracks of pepper then mix properly to combine. This makes the dredge station.
- Using another mixing bowl, add in the eggs and beat lightly.
- In a Ziploc bag, add in the pork rinds and bash into breadcrumbs with the aid of a rolling pin.
- Pour the pork rinds into a bowl containing the coconut flakes, ¼ teaspoon salt, and few cracks of pepper and then mix everything to combine.
- Season the shrimp with salt to taste.
- Working with one shrimp at a time, dip into the bowl containing the coconut flour, dredge in the eggs then finally, coat with the pork rind mixture. Make sure you shake off excess as you dredge.
- Next, spray the air fryer’s basket with a non-stick cooking spray and then add in the coated shrimp and fry for about eight minutes, flipping halfway.
- Make the sauce by mixing all its ingredients in a bowl .
- Serve the shrimp with the sauce.
