This recipe is best served over zoodles or cauliflower rice.

When you get home, use some frozen cauliflower rice or spiralize a few zucchini and you have a yummy dinner that satisfies. You can add more mushrooms if you like your stroganoff to have more ingredients. Just be sure to add a little more salt to taste.
CROCKPOT KETO SPINACH MUSHROOM STROGANOFF

Ingredients
- 1 tbsp. butter
- 10 oz. Portobello mushroom quartered
- 12 oz. white mushrooms, quartered
- 1 onion, diced
- 2 garlic cloves, minced
- 1 tsp. paprika
- ½ cup beef broth
- 1 cup sour cream
- 2 tbsp. keto ketchup
- 1 tsp. Worcestershire sauce
- ½ tsp. black pepper
- 8 oz. cream cheese
- 2.5 oz. fresh baby spinach
- salt to taste
Instructions
- Place the garlic, onion, mushrooms, and butter in crockpot.
- In another bowl, mix the paprika, salt, black pepper, Worcestershire sauce, ketchup, sour cream, and broth.
- Pour the mixture over ingredients in crockpot.
- Cook on low for 7½ hours .
- Add spinach and cream cheese.
- Cook for ½ hour more.
