EASY KETO CHICKEN CAPRESE

Ingredients
- 2 tbsp. olive or avocado oil
- 5 boneless skinless chicken thighs
- Salt and pepper
- 5 slices of fresh mozzarella
- 1 medium tomato 5 slices
- 1/4 cup fresh basil chopped
Instructions
- Preheat oven to 375°F.
- Add oil to large skillet and heat oil.
- Add the chicken thighs and season with salt and pepper.
- Brown on each side for about 3 minutes per side
- In a baking dish, arrange the chicken in single layer.
- Add mozzarella slice to each chicken thigh.
- Add tomato slice on top of mozzarella cheese.
- Bake for 25 minutes until the chicken is at 165°F.
- Broil for 3 minutes until cheese is brown.
- Sprinkle with fresh basil.
