Easy and fast to prepare, you can serve this Chinese-inspired fried cauliflower rice for a light lunch, as the base of a stir fry or even for part of a casserole meal such as chicken and mushrooms.
Just substitute regular rice with this cauliflower rice. Just be sure that you treat it as you would instant rice and add it to any cooked meals at the end.

Ingredients
- 1 head of cauliflower, cut into 1 inch florets
- 3 eggs, whisked
- 1 cup scallions or leeks
- 5 tbsp. coconut oil
- Salt to taste
Instructions
- Add the cauliflower florets to a food processor and grate to get small pieces like rice.
- Add 3 tbsp. coconut oil in a pan and then add the leek and cauliflower rice.
- Set heat to high, stirring regularly for about 5 minutes
- Add 2 tbsp. oil to another skillet.
- Set heat to medium and scramble the eggs.
- Add scrambled eggs to leek and cauliflower.
- Add salt to taste.
- You can add keto-friendly soy sauce if using in a stir fry or as a side dish.
