Fresh Shrimp with Avocado Dressing

FRESH SHRIMP WITH AVOCADO DRESSING

Ingredients

  • 4 lettuce leaves
  • 24 cooked, peeled shrimp
  • 1 C cottage cheese
  • 4 slices lemon
  • Avocado Dressing:
  • 1 large avocado, peeled and pitted
  • 1 C sour cream
  • 1 tsp. grated lemon peel
  • 1 TB fresh lemon juice
  • 2 tsp. prepared horseradish
  • 1/2 tsp. salt

Instructions

  1. For the avocado dressing, mash avocado in a small bowl
  2. Stir in sour cream, lemon peel, lemon juice, horseradish and salt, mixing well.
  3. Cover and refrigerate for at least 30 minutes to allow flavors to meld.
  4. Arrange lettuce leaves on 4 salad plates.
  5. Top with a scoop of cottage cheese
  6. Surround with shrimp.
  7. Garnish with a lemon twist.
  8. Serve with Avocado Dressing.
