This recipe allows you to mix things up and have something different for your first meal of the day. The carb count is a little high but you can reduce it by eliminating the onions. You can add salt and pepper to this recipe but it’s entirely up to you.
You can cook your eggs any way that you like them just be careful that you cook your eggs enough as undercooked eggs can cause salmonella. I like my eggs over easy, breaking the yolk and letting it run over the zucchini. If you like your eggs scrambled or over hard, some cheddar cheese sprinkled over the top is a nice addition.
