One of the most difficult things about the keto diet can be coming up with a variety of side dishes. Very often, you get stuck eating the same old veggies. This recipe allows you to enjoy a flavorful side dish that is very easy to make.
You don’t have to add the sun-dried tomatoes but it gives it a little more flavor and color. You can also leave out the white wine but it adds a great flavor and tastes quite fancy.
GREEN BEANS AND MUSHROOMS

Ingredients
- 1 lb. fresh green beans
- 2 tbsp. olive oil
- 1 1/2 tsp. garlic - minced
- 1/2 cup dry white wine
- 6/5 oz. mushrooms
- 2 tbsp. sun dried tomatoes
- 2 tsp. fresh thyme
Instructions
- Add water to medium pan and boil green beans for 4 minutes
- Drain green beans and cool them.
- Add olive oil to large skillet and place on medium heat.
- Add garlic and fry for about 2 minutes.
- Add wine, tomatoes, thyme and mushrooms.
- Turn heat up to high and cook for about 5 minutes until the wine evaporates.
- Add the green beans and saute for about 2 more minutes.
- Add salt and pepper to taste before serving.
