Green Beans and Mushrooms

One of the most difficult things about the keto diet can be coming up with a variety of side dishes. Very often, you get stuck eating the same old veggies. This recipe allows you to enjoy a flavorful side dish that is very easy to make.

You don’t have to add the sun-dried tomatoes but it gives it a little more flavor and color. You can also leave out the white wine but it adds a great flavor and tastes quite fancy.

GREEN BEANS AND MUSHROOMS

Ingredients

  • 1 lb. fresh green beans
  • 2 tbsp. olive oil
  • 1 1/2 tsp. garlic - minced
  • 1/2 cup dry white wine
  • 6/5 oz. mushrooms
  • 2 tbsp. sun dried tomatoes
  • 2 tsp. fresh thyme

Instructions

  1. Add water to medium pan and boil green beans for 4 minutes
  2. Drain green beans and cool them.
  3. Add olive oil to large skillet and place on medium heat.
  4. Add garlic and fry for about 2 minutes.
  5. Add wine, tomatoes, thyme and mushrooms.
  6. Turn heat up to high and cook for about 5 minutes until the wine evaporates.
  7. Add the green beans and saute for about 2 more minutes.
  8. Add salt and pepper to taste before serving.
