Ingredients
- 3 lbs. of boneless, skinless chicken thigh fillets
- Salt and coarse ground black pepper
- 1 tablespoon of ground coriander seed
- 1 tablespoon of ground cinnamon
- 1 tablespoon of cayenne pepper
- 1 teaspoon of ground ginger
- 1 tablespoon of ground nutmeg
- 3 tablespoons of coconut oil, melted
Instructions
- Pat dry the chicken and transfer to a baking sheet and season with pepper and salt. Set aside for about thirty minutes before transferring to the air fryer.
- Mix the coriander, cayenne, cinnamon, nutmeg, and ginger in a bowl. Coat the chicken pieces with the mixture and then brush with coconut oil on all sides.
- Transfer four chicken pieces to the air fryer basket and set the air fryer to 390 degrees F for ten minutes.
- When cooked, remove from the basket and transfer to a dish and cover. Repeat until all the chicken is cooked.
