For a Mexican flavor you and your whole family will love, you have to try this chicken burrito bowl. The recipe doesn’t show adding any extras like green and red peppers or jalapenos but you can simply saute them in your Instant Pot super quick and add them for even more flavor.
This gives you all of your favorite burrito fillings in a bowl instead of being wrapped inside a high-carb tortilla. You can add guacamole, sour cream and cilantro for even more goodness.
INSTANT POT CHICKEN BURRITO BOWLS

Ingredients
- 1 lb. chicken breast - cubed
- 1 tsp. olive oil
- 1 tsp. minced garlic
- 1 tsp. chili powder
- ½ tsp. paprika
- ½ tsp. cumin
- ½ tsp. onion powder
- salt and pepper to taste
- 2 cups riced cauliflower
Instructions
- Press Saute on Instant Pot.
- Add olive oil, minced garlic.
- Add chicken breast and then sprinkle on chili powder, paprika, cumin, onion powder, salt and pepper and brown chicken on each side.
- Turn Instant Pot off and add 1/3 cup water.
- Place trivet over chicken.
- Place riced cauliflower in oven safe bowl and place inside Instant Pot on top of trivet.
- Seal and set to manual high pressure for 1 minute.
- Release pressure naturally for 5 minutes, then do a quick release.
- Plate chicken and riced cauliflower in bowl and add your choice of toppings.
