Banana extract is the next best thing, especially if you are missing this flavor while on the keto diet.
You can find banana extract in the baking section of your favorite grocery store. If you aren’t a big fan of banana, you can experiment with different extract flavors in this recipe or add a few blueberries instead. Any flavor you add should be fine.

Ingredients
- cup blanched almond flour
- ⅓ cup sour cream
- ½ cup finely chopped walnuts
- ⅓ cup powdered erythritol
- 1 large egg
- 1½ tbsp. vegetable oil
- 2 tsp. banana extract
- ¼ tsp. baking soda
- ¼ tsp. salt
Instructions
- Preheat oven to 350 F.
- In a bowl, combine almond flour, erythritol, baking soda, salt and mix well.
- In another bowl, lightly beat the egg.
- Add sour cream, vegetable oil, banana extract and mix until smooth.
- Add the wet mixture to the dry mixture.
- Stir until thoroughly combined.
- Fold in the walnuts.
- Pour into cupcake liners, filling them about 2/3 full.
- Bake for about 20 minutes or inserted toothpick comes out clean.
- Cool at room temperature.
