Here’s a beef stroganoff minus the pasta to make it keto-friendly. You won’t even miss the noodles as this has such a rich and beefy taste. The mushrooms get all of the flavor and you thicken it up using xanthan gum.
You can eat it over cauliflower rice, zoodles or even shirataki noodles. Any way you eat it, you will love it!
KETO BEEF STROGANOFF

Ingredients
- 1 tbsp. oil
- ½ cup diced onions
- 1 tbsp. garlic
- 1 lb. cubed beef stew meat
- 1½ cups chopped mushrooms
- 1 tbsp. Worcestershire Sauce
- 1 tsp. salt
- ½ tsp. black pepper
- ¾ cup water
- ⅓ cup sour cream
- ¼ tsp. xanthan gum
Instructions
- Turn Instant Pot to Saute and add oil after it heats up.
- Add onions and garlic stirring constantly.
- Stir in beef, mushrooms, Worcestershire sauce, water, salt and pepper.
- Cover Instant Pot and set to 20 minutes high pressure.
- After 20 minutes allow the pressure to release naturally for 10 minutes then release any pressure remaining.
- Remove lid and turn on Saute. Add the sour cream while stirring .
- Add the xanthan gum slowly, constantly stirring until desired thickness.
