I’m always looking for recipes that aren’t too difficult to make and that the whole family will love. Chicken is a staple meat in every house and to stay on track, you can’t eat plain old chicken breasts all the time. This is a delicious way to have a complete dinner in one pan.
The chicken is juicy and the filling is bursting with flavor. There is a little work involved to blanch the broccoli but it’s still pretty easy to do and well worth it for the taste. As always, experiment with different keto veggies for your filling, such as spinach, cauliflower or asparagus.
KETO BROCCOLI STUFFED CHICKEN

Ingredients
- 4 chicken breasts
- 1 tsp. Italian seasoning
- 1 tsp. paprika
- 1/2 tsp. garlic powder
- 1 tsp. salt
- 1/2 tsp. black pepper
- 1 tbsp. olive oil
For the filling
- 2 cups broccoli florets - chopped and blanched
- 1/4 cup bell pepper - minced
- 1/2 cup cheddar cheese
- 1/2 cup cream cheese - softened
- 1/4 cup Parmesan - grated
- 2 cloves garlic - minced
- Salt and pepper to taste
Instructions
- Preheat oven to 400F.
- Cut up broccoli into small pieces and blanch.
- Slice chicken breasts horizontally to create a pocket
- Season chicken breasts with Italian seasoning, paprika, garlic powder, salt and pepper.
- Using a large bowl, mix together the blanched broccoli, bell pepper, garlic, cream cheese, cheddar cheese, salt and pepper.
- Spoon broccoli mixture into chicken breasts.
- If needed, use a toothpick to keep closed.
- Add olive oil into large skillet and add chicken breasts.
- Cook each side for about 2 or 3 minutes to brown.
- Transfer to baking pan and cover with foil.
- Bake for 15 to 20 minutes.
