I used to eat a lot of rice before keto and one of my favorites was Dirty Rice. I substituted the rice with cauliflower rice and now can enjoy this Creole dish again. This recipe calls for ground beef but you can use pork, turkey or chicken in its place or add it to the dish for more flavor.
You can use fresh or frozen cauliflower rice. Frozen cauliflower rice is good for a fast meal but I prefer freshly grated cauliflower rice.

Ingredients
- 1 tbsp. olive oil
- 1 green bell pepper
- 1 onion
- pound of ground beef
- 3 cups cauliflower rice
- 1/2 cup water
- 1 tsp. beef bouillon
- 1 tsp. garlic powder
- 1 tsp. creole seasoning
- 1/2 tsp. celery seed
- 1/4 tsp. cayenne pepper powder
- 1/4 tsp. pepper
Instructions
- Add olive oil to large skillet and heat over medium heat.
- Add diced peppers and onions and saute for about 5 minutes.
- Add ground beef and cook thoroughly.
- Add cauliflower rice, water, bouillon, and seasonings.
- Cook until all liquid has absorbed.
