It’s an easy dinner that you can have on the table in under an hour. This will, no doubt, become a family favorite that you will make over and over.
As with any recipe, you can add your own extras in. We suggest Swiss cheese but you can use your favorite cheese. You can add in broccoli or green beans for even more healthy flavors. If you like a spicier dish, add in some red pepper flakes.
KETO CHEESY CHICKEN CASSEROLE

Ingredients
- 3/4 cup sour cream
- 1/2 cup cream cheese
- 3 tbsp. green pesto
- 3 tbsp. lemon juice
- 3 tbsp. butter
- 6 skinless chicken thighs
- 1 onion, finely chopped
- 6 sliced tomatoes
- 3 cups cauliflower - cut
- 1 cup Swiss cheese
Instructions
- Preheat oven to 400°F.
- In a large frying pan, melt butter, add the chicken and season with salt and pepper.
- Fry to a golden brown.
- Mix the cream cheese, sour cream, pesto and lemon juice. Season with salt and pepper to taste.
- Grease a 9" by 13" baking dish and add the cooked chicken.
- Pour the cheese and cream mixture.
- Add the onion and cauliflower and place tomato slice on each chicken thigh.
- Bake for 30 minutes.
- On the last 10 minutes, top with the shredded Swiss cheese.
