Using rotisserie chicken can help you to make quick and easy meals. For a fast and simple chicken salad, you can use any leftover rotisserie chicken. This recipe calls for using the chicken breast but you can use the dark meat if you wish. You will get more fat that way.
Be sure that you use a keto-friendly mayo that doesn’t have sugar added. This salad uses fresh baby spinach but like anything, you can add different types of lettuce.
