For a decadent and chocolaty treat, you can have a tasty mousse in about ten minutes. The secret is to keep the can of coconut cream in the fridge so the cream sets. Keep a can in your fridge at all times to quickly whip up a sweet treat anytime you want.

Ingredients
- 1 1/4 cup coconut cream
- 1/4 cup heavy cream
- 2 tbsp. cocoa unsweetened
- 3 tbsp. erythritol
- 1 tsp. vanilla extract
Instructions
- Store a 400mL can of coconut cream in the fridge overnight to allow the cream to set.
- Scoop out hardened coconut cream from can, leaving the clear liquid behind. and place the coconut cream into a bowl.
- Add the heavy cream and use a hand mixer on low speed.
- To prevent the cocoa powder from spraying everywhere, keep the mixer on low speed as you add the remaining ingredients and gradually build up to medium speed for 2 to 3 minutes as the mixture thickens.
- Serve in individual ramekins or glasses.
- Sprinkle with unsweetened shredded coconut.
