Keto Chocolate Mousse

Who doesn’t love chocolate?! It’s especially delicious when you know that you aren’t gaining weight and you are staying on track with your healthy eating plans.

For a decadent and chocolaty treat, you can have a tasty mousse in about ten minutes. The secret is to keep the can of coconut cream in the fridge so the cream sets. Keep a can in your fridge at all times to quickly whip up a sweet treat anytime you want.

Ingredients

  • 1 1/4 cup coconut cream
  • 1/4 cup heavy cream
  • 2 tbsp. cocoa unsweetened
  • 3 tbsp. erythritol
  • 1 tsp. vanilla extract

Instructions

  1. Store a 400mL can of coconut cream in the fridge overnight to allow the cream to set.
  2. Scoop out hardened coconut cream from can, leaving the clear liquid behind. and place the coconut cream into a bowl.
  3. Add the heavy cream and use a hand mixer on low speed.
  4. To prevent the cocoa powder from spraying everywhere, keep the mixer on low speed as you add the remaining ingredients and gradually build up to medium speed for 2 to 3 minutes as the mixture thickens.
  5. Serve in individual ramekins or glasses.
  6. Sprinkle with unsweetened shredded coconut.
