Keto Crepes

Almond flour crepes are the perfect breakfast meal! The possibilities are endless when it comes to what to stuff them with. They even make an awesome sugar free dessert for when that sweet craving hits.

We like ours best stuffed with strawberries and blueberries. They will keep well in the fridge for a couple days.

Keto Crepes

Ingredients

  • 4 OZ cream cheese softened
  • 4 eggs
  • 3/4 C almond flour
  • 2 TBSP granulated Swerve Sweetener
  • 1/4 C unsweetened almond milk
  • Pinch salt
  • Butter for the pan

Instructions

  1. Line large baking sheet with parchment paper.
  2. combine cream cheese, eggs, almond flour, sweetener, almond milk and salt. Puree until smooth and well combined.
  3. Rest 5 minutes.
  4. Set a 10-inch skillet over medium-low heat. Add butter to the pan to lightly coat it. Add a few tbsp of batter to the pan and swirl or spread into a thin layer that reaches the edges.
  5. Cook until edges are cooked and can be loosened with spatula.
  6. Loosen all the way around and lift one edge gently and work spatula underneath.
  7. Flip and cook on the other side until lightly browned.
  8. Remove and lay on prepared baking sheet, then continue with remaining batter.
