Everyones favorite BBQ side dish just got a keto makeover. This Creamy delicious keto egg salad will be a big hit at the next summer party. You won’t have to worry about left overs. The avocado mixed with the mayonnaise is what makes this dish so creamy. You won’t even know there is avocado in there!

Keto Egg Salad

Ingredients

  • 6 boiled eggs
  • 1 Avocado
  • 1 tbsp Dijon mustard
  • 3 tbsps Mayonnaise
  • 1 tsp Lemon juice
  • 1 tsp Dill
  • 1 tsp parsley
  • Salt and pepper to taste

Instructions

  1. Break boiled eggs with a fork in a large bowl.
  2. Add a pinch of salt and pepper to taste.
  3. Add the ripe avocado to the bowl and mash.
  4. Sprinkle the lemon juice on top of the avocado.
  5. Add mayonnaise and mustard to the egg mixture and mix
  6. Sprinkle the chopped parsley and dill and serve.
