Keto Egg Salad
Ingredients
- 6 boiled eggs
- 1 Avocado
- 1 tbsp Dijon mustard
- 3 tbsps Mayonnaise
- 1 tsp Lemon juice
- 1 tsp Dill
- 1 tsp parsley
- Salt and pepper to taste
Instructions
- Break boiled eggs with a fork in a large bowl.
- Add a pinch of salt and pepper to taste.
- Add the ripe avocado to the bowl and mash.
- Sprinkle the lemon juice on top of the avocado.
- Add mayonnaise and mustard to the egg mixture and mix
- Sprinkle the chopped parsley and dill and serve.
