Keto/Low-Carb Cauliflower Tortillas

Simple and easy to make tortillas that will let you enjoy the taste of Mexican. But not only Mexican, you can add anything to these tortillas to make a healthy wrap for breakfast, lunch or supper.

Because it’s so easy to make, you’ll find new foods to put inside and make them over and over!

Ingredients

  • Cauliflower head
  • 3 eggs
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400 F.
  2. Line cookie sheet with parchment paper.
  3. Grate cauliflower and place in microwave-safe bowl.
  4. Microwave for 4 minutes at max power or until cauliflower is tender.
  5. Place on kitchen towel and squeeze to remove all liquid.
  6. Transfer to clean bowl.
  7. In another bowl, beat eggs and add salt and pepper.
  8. Slowly add the beaten egg mixture to cauliflower and stir well.
  9. Shape the cauliflower mixture into 3 inch tortillas on sheet pan.
  10. Bake for 20 minutes or until set.
  11. Cool slightly.
  12. Heat a frying pan on medium heat.
  13. Fry the tortillas for one minute or until golden brown and flip them and cook for another minute.
  14. Serve with your choice of toppings
