KETO/LOW-CARB CAULIFLOWER TORTILLAS
Ingredients
- Cauliflower head
- 3 eggs
- Salt and pepper to taste
Instructions
- Preheat the oven to 400 F.
- Line cookie sheet with parchment paper.
- Grate cauliflower and place in microwave-safe bowl.
- Microwave for 4 minutes at max power or until cauliflower is tender.
- Place on kitchen towel and squeeze to remove all liquid.
- Transfer to clean bowl.
- In another bowl, beat eggs and add salt and pepper.
- Slowly add the beaten egg mixture to cauliflower and stir well.
- Shape the cauliflower mixture into 3 inch tortillas on sheet pan.
- Bake for 20 minutes or until set.
- Cool slightly.
- Heat a frying pan on medium heat.
- Fry the tortillas for one minute or until golden brown and flip them and cook for another minute.
- Serve with your choice of toppings
