Keto Mexican Cauliflower Rice Skillet

This is a one-pan dinner that pulls together in less than a half-hour. No one will even notice that it’s low-carb and keto-friendly.

You and your family will love that Mexican flavor and you can use our homemade taco seasoning recipe so you know you aren’t getting any additives that will wreak havoc on your insulin levels.

Add everything together in a skillet, cook and add cheese and you’ve got a delicious and flavorful dinner that everyone is going to enjoy.

MEXICAN CAULIFLOWER RICE SKILLET

Notes

Ingredients

  • 1 pound ground beef
  • 1/4 onion - diced
  • 1/2 red pepper - diced
  • 3 tbsp. taco seasoning
  • 1 cup diced tomatoes
  • 3 cups cauliflower rice - fresh or frozen
  • 1/2 cup chicken broth
  • 1 1/2 cups taco or cheddar cheese - shredded

Instructions

  1. Brown the ground beef in a large skillet over medium heat for 5 minutes.
  2. Add the onion and pepper and continue cooking until tender and meat is thoroughly cooked.
  3. Stir in taco seasoning.
  4. Add diced tomatoes and cauliflower rice.
  5. Reduce heat to low and let simmer for 8 to 10 minutes.
  6. Sprinkle the cheese, cover and cook until the cheese melts.
  7. You can add any of your favorite low-carb Mexican toppings when serving.
