MEXICAN CAULIFLOWER RICE SKILLET

Ingredients
- 1 pound ground beef
- 1/4 onion - diced
- 1/2 red pepper - diced
- 3 tbsp. taco seasoning
- 1 cup diced tomatoes
- 3 cups cauliflower rice - fresh or frozen
- 1/2 cup chicken broth
- 1 1/2 cups taco or cheddar cheese - shredded
Instructions
- Brown the ground beef in a large skillet over medium heat for 5 minutes.
- Add the onion and pepper and continue cooking until tender and meat is thoroughly cooked.
- Stir in taco seasoning.
- Add diced tomatoes and cauliflower rice.
- Reduce heat to low and let simmer for 8 to 10 minutes.
- Sprinkle the cheese, cover and cook until the cheese melts.
- You can add any of your favorite low-carb Mexican toppings when serving.
