Keto Pumpkin Pie

Pumpkin pie is for the holidays. If you are looking for a keto-friendly pie that doesn’t have a crust like cardboard, you will love this recipe. You could use pumpkin pie spice instead of the cinnamon, ginger, nutmeg and cloves but I would suggest freshly ground spices if you can.

If you use erythritol, it could crack before it’s done but it won’t affect the flavor. It could also seem that it’s not set when you inspect the edges but use a toothpick to check after one hour of cooking. If it comes out clean for the most part, it’s done.

KETO PUMPKIN PIE

Ingredients

  • 1 ½ c almond flour
  • 3 tbsp coconut flour
  • ¼ tsp baking powder
  • ¼ tsp kosher salt
  • 4 tbsp melted butter
  • 1 large egg, beaten

For the filling:

  • 1 (15-oz.) can pumpkin puree
  • 1 c heavy cream
  • ½ c packed keto-friendly brown sugar, such as Swerve
  • 3 large eggs, beaten
  • 1 tsp ground cinnamon
  • ½ tsp ground ginger
  • ¼ tsp ground nutmeg
  • ¼ tsp ground cloves
  • ¼ tsp kosher salt
  • 1 tsp pure vanilla extract

Instructions

  1. Preheat oven to 350°F.
  2. In large bowl, whisk almond flour, coconut flour, baking powder, and salt together.
  3. Add melted butter and egg and stir until a dough forms.
  4. Press dough evenly into a 9” pie plate, then use a fork to poke holes all over crust.
  5. Bake until lightly golden, 10 minutes.
  6. In large bowl, whisk pumpkin, cream, brown sugar, eggs, spices, and vanilla together until smooth.
  7. Pour pumpkin mixture into par-baked crust.
  8. Bake until filling is slightly jiggly in the middle and crust is golden approximately 45-50 minutes.
  9. Turn off oven and open oven door to let pie cool in oven for 1 hour.
  10. Refrigerate until ready to serve.
  11. Serve with whipped cream, if desired.
