Keto Southwestern Breakfast Skillet

Here is another wonderful low-carb breakfast that has a hint of southwestern spiciness. This is a great keto breakfast that has only 7 net carbs in each serving and you can keep it in your rotation of breakfast meals that you can eat any time of the day or night.

Many breakfast meals consist of potatoes which are a no-no on the keto diet but this meal replaces the potatoes with radishes! This is a tasty way to add fiber to keep you full longer. Radishes have more water inside than potatoes and they don’t taste the same but they are still quite good. Cooking them gets rid of the spiciness and heat that you taste when eating them raw.

KETO SOUTHWESTERN BREAKFAST SKILLET

Ingredients

  • 2 tbsp. unsalted butter, divided
  • 8 oz. bag radishes, rinsed, trimmed, and quartered
  • ¼ cup red onion, finely diced
  • 2 tsp. Italian seasoning
  • 1 tsp. ground cumin
  • ½ tsp. ground chili powder
  • Sea salt and black pepper, to taste
  • ¾ cup mini sweet peppers, diced (tri-color)
  • 4 large eggs
  • 4 strips thick-cut bacon, cooked crispy
  • 2 tbsp. fresh cilantro, chopped
  • 1 large avocado, diced
  • 1 large lime, cut into 8 wedges

Instructions

  1. Melt one tablespoon butter in a large non-stick skillet over medium heat.
  2. Add the radishes, red onion, and Italian seasoning.
  3. Season with salt and black pepper to taste, and cook, stirring occasionally until the radishes start to develop some color, approximately 4-5 minutes.
  4. Add the remaining tablespoon of butter and the chopped peppers to the skillet.
  5. Cook, stirring occasionally, until the peppers soften, approximately 3-4 minutes.
  6. Create four “wells” in the skillet by pushing the vegetables to the side with a spatula.
  7. Add an egg into each opening and reduce heat to medium low.
  8. Cover and cook until the eggs are cooked through, approximately 3-5 minutes depending on desired level of doneness.
  9. Remove from heat and crumble the crispy bacon on top of the skillet.
  10. Top with the fresh cilantro and serve immediately with the diced avocado and fresh lime wedges on the side.
