KETO STUFFED BACON-WRAPPED CHICKEN BREASTS
Ingredients
- 8 boneless and skinless chicken breasts
- 2 cups chopped spinach
- 1 cup sliced mushrooms
- 1 cup cream cheese
- 1/2 cup cottage cheese
- Salt and pepper to taste
- 12 slices bacon
Instructions
- Preheat oven to 375° F.
- In a bowl, combine the spinach, mushrooms, cream cheese and cottage cheese.
- Season with salt and pepper.
- Flatten the chicken breasts with a mallet to about a half-inch thickness.
- Cut pockets in one end.
- Spoon mixture into each chicken breast pockets.
- Wrap two bacon slices around each chicken breast.
- Brown the bacon-wrapped chicken in skillet for 5 minutes on each side.
- Place the chicken pieces in baking dish.
- Bake chicken for 45 minutes.
- The bacon should be crispy and the chicken should be at an internal temp of 165° F.
