Keto Zucchini Lasagna

This recipe looks like it takes a lot of time but it doesn’t take as long as it appears. To keep your lasagna from becoming watery, it’s important to add salt to it and then let it sit so the liquid comes out. The thinner your slices, the less watery it will be too.

You could even bake your zucchini slices for about 10 minutes  or grill them for about 1-2 minutes on each side and then cool them before putting your lasagna layers together to get even more liquid out.

This may be a bit time consuming but it will be worth it! This is comfort food and healthy!

KETO ZUCCHINI LASAGNA

Ingredients

  • 1 pound ground beef
  • 1 cup sugar-free marinara sauce
  • 1 large zucchini
  • 10 oz. ricotta cheese
  • 8 oz. mozzarella cheese shredded
  • 1 large egg
  • 2 cloves garlic
  • 1 tbsp. garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F.
  2. Peel zucchini and use a mandolin slicer to slice into thin strips. Remove seeds.
  3. Salt and let sit for 60 minutes turning over after 30 minutes and blot with paper towels.
  4. Brown ground beef in pan and add marinara.
  5. Season well with salt and pepper.
  6. In a bowl, combine ricotta cheese, 4 ounces of mozzarella, diced garlic cloves, garlic powder, salt, pepper and egg.
  7. Layer into a small casserole dish: sauce, zucchini, ricotta cheese mix, sauce, zucchini, ricotta cheese mix.
  8. Cover with foil and bake for 60 minutes.
  9. Sprinkle the rest of the mozzarella cheese over the top and broil uncovered for 2-3 minutes to melt and brown the top.
