These are easy-to-make, yummy and healthy. These peanut butter bars consist of a layer of gluten-free, keto-friendly shortbread crust, a layer of peanut butter and then they are topped off with a layer of sugar-free chocolate.
If you want to do a no-bake version of this cookie, just skip the shortbread crust layer. You may want to add a few extra tablespoons of the peanut butter powder so that they are more sturdy.
Either way, they are delicious so choose which one works best for you.

Ingredients
- Shortbread Cookie Layer:
- 1 cup almond flour
- 1/4 cup erythritol
- 3 tbsp. coconut oil
- 1/2 tsp. vanilla extract
Peanut Butter Layer:
- 1/3 cup powdered erythritol
- 1/3 cup peanut butter powder - unsweetened
- 3/4 cup peanut butter - no sugar added
- 1/2 tsp. vanilla extract
Chocolate Layer:
- 6 ounces sugar-free chocolate
- 3 tbsp. coconut oil
- 1 tbsp. powdered erythritol
Instructions
- Preheat oven to 350°F.
- Line a 9x9 baking dish with parchment paper and up onto sides.
- In a medium mixing bowl, add the almond flour and erythritol and stir.
- In a separate smaller bowl, melt the coconut oil and stir in the vanilla.
- Mix in the flour and erythritol.
- Flatten the dry mix into the liquid until it becomes a crumbly dough.
- Press the dough into the lined baking dish.
- Bake for 10 minutes.
- As the shortbread is baking, mix together 1/3 cup powdered erythritol and peanut butter powder.
- Add in the peanut butter and the vanilla and mix thoroughly.
- After cooling the shortbread crust, spread the peanut butter mixture evenly.
- In another bowl, add the chocolate chips and 3 tablespoons of coconut oil and melt in microwave.
- When melted, stir in 1 tablespoon of powdered erythritol.
- Spread evenly over peanut butter layer.
- Cool completely.
- Cut into squares.
- Store in refrigerator.
