Mediterranean Keto Crockpot Chicken

This recipe can be eaten with most diets and the keto diet is no exception. For a hearty dish full of flavor, throw everything in your crock pot, stir it around, turn it to low and let it cook while you are at work.

You can eat this over cauliflower rice or with cauliflower mash. One of the easiest meals you’ll ever love.

MEDITERRANEAN KETO CROCKPOT CHICKEN

Ingredients

  • 2 lbs. boneless chicken breasts
  • 15 oz. can of diced tomatoes
  • 12 oz. jar of roasted peppers, diced and drained
  • 10.2 oz. kalamata pitted olives, chopped
  • 4 oz. feta cheese, crumbled
  • 3 garlic cloves, minced
  • ¼ cup fresh basil leaves, chopped
  • 2 tbsp. balsamic vinegar
  • ¼ tsp. red pepper flakes, crushed
  • salt and pepper to taste

Instructions

  1. Season the chicken generously with salt and pepper.
  2. Add chicken to crock pot.
  3. Add the rest of the ingredients.
  4. Cook for 8 hours on low setting.
