Ingredients

- Sea salt and black pepper to taste
- ½ large head cauliflower chopped
- 3 cups beef broth, preferably organic
- 1/3 cup heavy cream, tempered
- 3 cups. sharp cheddar cheese finely shredded
- 2 tbsp. fresh parsley chopped

- 6 cups baby arugula
- 12 grape or cherry tomatoes, cut in half
- 1 oz. Pecorino-Romano cheese, shaved
- 1 tbsp. extra virgin olive oil
- 2 tbsp. fresh lime juice
