Parmesan Roasted Mushrooms

For easy and flavorful mushrooms, you will love these buttery buttons that take only eight minutes to prep.

If you are like me and have fresh mushrooms on hand at all times, this makes a tasty side dish that goes with just about anything. Even your little ones will be asking for more!

I even make this as a main dish for just myself when I get home late and I’m beat after a long day. It’s filling and goes great with most anything, but I like it with a steamable bag of cauliflower.

Parmesan Roasted Mushrooms

Ingredients

  • 2 oz cremini or white button mushrooms
  • 4-6 tbsp unsalted butter
  • 6 cloves finely minced fresh garlic
  • ½ tsp dried oregano
  • ¼ tsp dried basil
  • ¼ tsp dried thyme
  • ¼ tsp allspice
  • ⅛-¼ tsp black pepper
  • 2-4 tbsp grated Parmesan cheese
  • Salt to taste

Instructions

  1. Preheat oven to 400°F.
  2. Melt butter and add minced garlic and set aside.
  3. Trim the stems and clean mushrooms.
  4. Line mushrooms in even layer in rimmed baking sheet.
  5. Toss with garlic butter.
  6. Season with oregano, basil, allspice, thyme, salt and pepper.
  7. Roast for 20 minutes or until tender.
  8. Sprinkle with Parmesan cheese.
