If you are like me and have fresh mushrooms on hand at all times, this makes a tasty side dish that goes with just about anything. Even your little ones will be asking for more!
I even make this as a main dish for just myself when I get home late and I’m beat after a long day. It’s filling and goes great with most anything, but I like it with a steamable bag of cauliflower.
PARMESAN ROASTED MUSHROOMS

Ingredients
- 2 oz cremini or white button mushrooms
- 4-6 tbsp unsalted butter
- 6 cloves finely minced fresh garlic
- ½ tsp dried oregano
- ¼ tsp dried basil
- ¼ tsp dried thyme
- ¼ tsp allspice
- ⅛-¼ tsp black pepper
- 2-4 tbsp grated Parmesan cheese
- Salt to taste
Instructions
- Preheat oven to 400°F.
- Melt butter and add minced garlic and set aside.
- Trim the stems and clean mushrooms.
- Line mushrooms in even layer in rimmed baking sheet.
- Toss with garlic butter.
- Season with oregano, basil, allspice, thyme, salt and pepper.
- Roast for 20 minutes or until tender.
- Sprinkle with Parmesan cheese.
