Pumpkin Cookies With Cream Cheese Icing

It doesn’t have to be fall to enjoy the deliciousness of pumpkin. These pumpkin pie cookies with cream cheese icing do not taste like anything you would eat while on a diet.

If you don’t want 3 dozen cookies, just cut the recipe in half. You can make vanilla cream cheese icing but if you want even more pumpkin flavor, add 2 teaspoons of pumpkin pie spice when mixing your icing.

No one will ever guess that these cookies are “keto,” they will just ask for more!

PUMPKIN COOKIES WITH CREAM CHEESE ICING

Ingredients

  • 4 oz. cream cheese - softened
  • 4 tbsp. sour cream
  • 1 cup pumpkin puree
  • 1/2 cup butter - softened
  • 4 eggs
  • 2 cups almond flour
  • 1/2 cup coconut flour
  • 1 cup powdered erythritol
  • 4 tbsp. pumpkin pie spice
  • 2 tsp. baking powder
  • 2 tsp. vanilla extract
  • Cream Cheese Icing
  • 6 oz cream cheese (softened, cubed)
  • 1/2 cup powdered erythritol
  • 1 tsp vanilla extract or 2 tsp. pumpkin pie spice
  • 1 tbsp heavy cream - optional

Instructions

  1. Preheat oven to 400˚F.
  2. Line a cookie sheet with parchment paper.
  3. In a large mixing bowl, mix butter and 2 ounces of cream cheese with electric hand mixer until smooth.
  4. Add the sour cream, eggs, pumpkin and 2 teaspoons of the vanilla extract and mix until smooth.
  5. In another bowl, add almond flour, coconut flour, 1 cup erythritol, pumpkin pie spice and baking powder. Mix with fork until thoroughly combined.
  6. Add the dry ingredients to the wet and mix thoroughly.
  7. Drop about a tablespoon of batter onto cookie sheet.
  8. Bake for 15 minutes or until brown.
  9. Cool completely before icing.

For the icing:

  1. In a medium bowl, using an electric hand mixer, thoroughly mix 6 ounces of softened cream cheese, 1/2 cup of powdered erythritol, 1 teaspoon of vanilla extract.
  2. Mix until smooth.
  3. If the icing is too thick, use heavy cream to thin it out.
