Simple But Delicious Keto Butter Cookies

This is a very simple cookie recipe that only takes 4 ingredients – almond flour, erythritol, vanilla and butter. They are easy to make and this is a great starter if you have kids that want to help. They are so easy that anyone can make them with no problems.

Be sure that you let them cool for a few hours to get that crunch on the outside that most butter cookies have. Most cookies made with almond flour always taste better when cooled for a few hours. I like to store them in the fridge and eat them when they are cold.

KETO BUTTER COOKIES

Ingredients

  • 1 cup almond flour - blanched
  • ¼ cup powdered erythritol
  • 3 tbsp. softened salted butter
  • ½ tsp. vanilla extract

Instructions

  1. Preheat oven to 350 F.
  2. Line cookie sheet with parchment paper or silicone mat.
  3. In mixing bowl, combine all ingredients.
  4. Mix until dough forms.
  5. Form 10 one-inch balls.
  6. Place on cookie sheet about 2 inches apart.
  7. Flatten each ball with your hand or use a fork to create criss-cross pattern.
  8. Bake for 10 minutes or until cookie edges are golden brown.
  9. Cool completely at room temperature.
