This is a very simple cookie recipe that only takes 4 ingredients – almond flour, erythritol, vanilla and butter. They are easy to make and this is a great starter if you have kids that want to help. They are so easy that anyone can make them with no problems.
Be sure that you let them cool for a few hours to get that crunch on the outside that most butter cookies have. Most cookies made with almond flour always taste better when cooled for a few hours. I like to store them in the fridge and eat them when they are cold.
KETO BUTTER COOKIES
Ingredients
- 1 cup almond flour - blanched
- ¼ cup powdered erythritol
- 3 tbsp. softened salted butter
- ½ tsp. vanilla extract
Instructions
- Preheat oven to 350 F.
- Line cookie sheet with parchment paper or silicone mat.
- In mixing bowl, combine all ingredients.
- Mix until dough forms.
- Form 10 one-inch balls.
- Place on cookie sheet about 2 inches apart.
- Flatten each ball with your hand or use a fork to create criss-cross pattern.
- Bake for 10 minutes or until cookie edges are golden brown.
- Cool completely at room temperature.
