You will fry up the asparagus for a few minutes in your skillet along with the ham, pour over the egg mixture and pop it into the over for about 15 minutes and everything comes out golden and delicious. You can add the cheese as soon as you pull it out of the oven but if you want a crunchy cheese topping, just add the cheese about five minutes before you take it out of the oven.
You can substitute cheeses and if you don’t like asparagus, this works well with broccoli or cauliflower.
HAM AND ASPARAGUS EGG BAKE

Ingredients
- 2 Tbsp butter
- 3 Tbsp sliced green onion
- 1 1/2 cups chopped asparagus
- 6 eggs
- 1/3 cup heavy cream
- 1 tsp dried mustard
- 1/4 tsp salt
- 1/4 tsp pepper
- 2 cups cooked ham, chopped
- 3/4 cup Cheddar cheese, shredded
Instructions
- Preheat oven to 350.
- In a large, heavy skillet, melt butter over medium high heat and cook onions and asparagus for 3 minutes.
- In a large mixing bowl, stir together eggs, cream and seasonings.
- Place cooked onions, asparagus and ham into a baking dish and pour egg mixture on top.
- Bake for 10 -15 minutes
- Sprinkle cheese on top to taste.
