PERFECT LOW CARB RHUBARB TART

Ingredients
- For Crust
- 6 oz. of almond flour
- 1⁄3 cup of erythritol
- ¾ oz. of unsweetened shredded coconut
- 3 oz. of butter
- For Filling
- 4¼ oz. of softened butter
- ½ cup of erythritol
- 1¾ cups of almond flour
- 3 large eggs
- 1 teaspoon of vanilla extract
- 7 oz. of rhubarb
Instructions
- Preheat the oven to about 360 degrees F, then grease a large tart pan.
- Pour the almond flour, shredded coconut, and erythritol into a bowl and stir to mix. Next, pour the butter into a microwave-safe container and melt in the microwave. Then add in the dry ingredients into the butter and whisk until it forms a dough.
- Pour the dough into the tart pan to form the crust, then place in the oven and bake for ten minutes.
- Pour the erythritol and softened butter into the mixer bowl and beat until fluffy and pale. Then add in the eggs, almond flour, and vanilla and beat until well mixed.
- Remove the crust from the oven, then slice long strips from the rhubarb stalks and set aside.
- Scoop the filling into the tart crust and then place the rhubarb stalks on the filling and then place the pan in the oven. Bake for an additional thirty-five minutes.
