Low Carb Rhubarb Tart

Ingredients

  • For Crust
  • 6 oz. of almond flour
  • 1⁄3 cup of erythritol
  • ¾ oz. of unsweetened shredded coconut
  • 3 oz. of butter
  • For Filling
  • 4¼ oz. of softened butter
  • ½ cup of erythritol
  • 1¾ cups of almond flour
  • 3 large eggs
  • 1 teaspoon of vanilla extract
  • 7 oz. of rhubarb

Instructions

  1. Preheat the oven to about 360 degrees F, then grease a large tart pan.
  2. Pour the almond flour, shredded coconut, and erythritol into a bowl and stir to mix. Next, pour the butter into a microwave-safe container and melt in the microwave. Then add in the dry ingredients into the butter and whisk until it forms a dough.
  3. Pour the dough into the tart pan to form the crust, then place in the oven and bake for ten minutes.
  4. Pour the erythritol and softened butter into the mixer bowl and beat until fluffy and pale. Then add in the eggs, almond flour, and vanilla and beat until well mixed.
  5. Remove the crust from the oven, then slice long strips from the rhubarb stalks and set aside.
  6. Scoop the filling into the tart crust and then place the rhubarb stalks on the filling and then place the pan in the oven. Bake for an additional thirty-five minutes.
