Three Cheese Zucchini Patties
Ingredients
- 4 zucchini
- 1/2 large onion
- 2 Tbsp mozzarella cheese
- 1 Tbsp cheddar cheese
- 2 Tbsp parmesan cheese
- 2 eggs
- 1/4 tsp Pink Himalayan Salt
- 1/4 tsp black peppe
- avacado oil for frying
Instructions
- Grate the large onion and zucchinis into a bowl. Add the mozzarella, cheddar, parmesan, eggs, black pepper and pink himalayan salt.
- Heat oil in frying pan over medium-high heat. When the oil is at the point of reaching frying level, take spoonfuls batter and drop them into the oil. Cook until outside is golden and inside is cooked through, which should take about 1-2 minutes. Repeat until all batter has been fried.
- Serve immediately and add a sprinkle of parsley.
