These are moist, chewy and chocolatey! They have the right texture and fudgy flavor which makes them the perfect keto brownie. I’ve used butter but you can use coconut oil instead.
The key to getting the right texture with these brownies is using blanched almond flour. If you use the courser almond meal, you won’t get the same texture and they will be more like chocolate cake instead of the fudgy texture you get with regular brownies.
I like adding walnuts in my brownies so feel free to add about a half cup of walnuts if you like nuts in your brownies.
KETO BROWNIES
Ingredients
- ½ cup blanched almond flour
- ½ tsp baking powder
- 1 tablespoon instant coffee
- 2 oz. chocolate
- 1 egg
- ½ tsp vanilla extract
- ½ cup cacao powder
- 2/3 cup Erythritol
- 8 tablespoons butter
Instructions
- Preheat oven to 325 F
- In a medium bowl whisk almond flour, baking powder, Erythritol, cocoa powder and instant coffee
- In another bowl melt chocolate and butter and whisk in the eggs and vanilla
- Add to dry ingredients and mix well
- Transfer batter into baking dish and bake for 20 minutes
- Remove and serve
