Here’s a low carb meatball filled with cheesy goodness in every bite. These meatballs go great over zoodles or as an hors d’oeuvre or appetizer.
Any way that you eat them, just be sure that you have plenty on hand. Each recipe makes 24 – 2 oz meatballs. Just double or triple the recipe if you need more.
RICOTTA CHICKEN MEATBALLS
Ingredients
- 2 lbs ground chicken (or turkey)
- 1/2 cup blanched almond flour
- 1/2 cup grated Parmesan cheese
- 1 tablespoon Italian seasoning
- 1/2 tablespoon crushed red pepper flakes
- 2 eggs
- 1/2 cup heavy cream
- 1/2 cup grated onion
- 1/2 cup whole milk ricotta cheese
- salt and pepper to taste
Instructions
- Line sheet pan with parchment paper or aluminum foil.
- In medium mixing bowl, use a fork to gently combine all ingredients except for chicken until combined.
- In large mixing bowl, place ground chicken and stir in cheese mixture with fork until thoroughly mixed.
- Form balls using 1/4 cup measuring cup or spoon and scoop onto parchment-lined sheet pan. Space out evenly.
- Bake for 25 minutes, turning pan halfway through.
- Remove meatballs from oven and serve immediately.
