If you are looking for a quick snack or appetizer, these zucchini pizza bites cook up fast. Although this recipe only has pepperoni, tomatoes and basil, you can add any cheese and toppings that you like.
The nutritional value will change with the toppings and depending on the sauce you use so don’t forget to account for those.
I add salt and let them alone for about 20 minutes to get out the excess water that’s in the zucchini. You could also pre-bake them for about five minutes.
To get these even more bubbly, you can broil them for a few minutes when they are done cooking.
ZUCCHINI PIZZA BITES

Ingredients
- 3 medium zucchini
- 2 cups mozzarella cheese
- 30 slices of pepperoni
- 30 cherry tomatoes
- 1/2 cup low carb marinara sauce
- Chopped fresh basil
Instructions
- Preheat oven to 450 F.
- Slice the zucchini into 1/4" rounds. Add salt to get some of the water out. Let sit with salt on it for about 20 minutes. Blot with paper towel after about 20 minutes.
- Place zucchini on baking sheet line with aluminum foil or parchment paper.
- Top with sauce, cheese and pepperoni and sliced cherry tomatoes
- Bake for 5 minutes or until the cheese is melted.
- Top with fresh basil
