Coming up with exciting side dishes can be difficult when doing keto but you will not believe that this risotto was not made with rice! It is so creamy, rich and delicious, your whole family is going to love it.
You can use the frozen riced cauliflower which cuts way down on the prep time and it doesn’t take long at all.
CAULIFLOWER RISOTTO WITH MUSHROOMS

Ingredients
- 1/4 cup butter
- 8 oz chopped mushrooms
- 2 cloves minced garlic
- Salt and pepper to taste
- 12 ounces frozen riced cauliflower
- 1/4 cup dry white wine
- 1/2 cup chicken broth
- 4 tbsp heavy cream
Instructions
- In a large saute pan, heat butter over medium heat and add chopped mushrooms and garlic.
- Saute until mushrooms are tender.
- Season with salt and pepper.
- Reduce heat to medium low and add cauliflower.
- Add white wine and cook until the liquid has reduced.
- Add broth by adding just a few tablespoons at a time.
- Stir constantly and letting broth evaporate each time.
- When cauliflower is almost tender, add more broth and a 3 tbsp of cream.
- Cover and continue to cook until tender adding more broth and cream as needed.
- Stir in Parmesan and salt and pepper to taste.
- Serve with grated Parmesan as desired.
