Ingredients
- 1 large sweet potato, peeled
- 2 cup of cauliflower florets
- 1 green onion, chopped
- 1 teaspoon of minced garlic
- 2 tablespoons of organic ranch seasoning mix or paleo ranch seasoning
- 1 cup of packed cilantro
- 1/2 teaspoon of chili powder
- 1/4 teaspoon of cumin
- 2 tablespoons of arrowroot starch or preferred gluten free flour
- 1/4 cup of ground flaxseed
- 1/4 cup of sunflower seeds
- 1/4 teaspoon of Kosher Salt and pepper
- Preferred dipping sauce
Instructions
- Chop the sweet potatoes into little pieces. Then pour the sweet potatoes into a blender and pulse until blended. Then add in the onion, cauliflower, and garlic. Blend again.
- Add in the flaxseed, sunflower seeds, cilantro, arrow root, and the rest of the seasonings. Blend again.
- Pour the resulting batter into a bowl and then scoop out a quarter cup of the batter and press into patties. Repeat the process until about ten patties are formed. Transfer the patties into the freezer to set.
- Transfer the patties into the air fryer and cook at about 360 degrees F for eighteen minutes. Ensure you flip after nine minutes.
