For a very easy dinner idea, foil packets are an awesome choice. The food inside the foil steams into a perfectly cooked dinner. The chicken and the vegetables are juicy and tender.
You can easily stay on your keto diet without sacrificing flavor and there’s hardly any work or clean up involved.
If your family is like mine, they love lemon pepper seasoning on chicken and fish. This recipe calls for broccoli but you can add any low-carb veggie you want, such as, cauliflower, asparagus, green beans or zucchini.
Leftovers can be easily stored in their foil packets and you can throw them in the oven to heat up the next day!
LEMON PEPPER CHICKEN FOIL PACKETS WITH BROCCOLI

Ingredients
- 4 chicken breasts
- 1 lb. of fresh broccoli
- 4 slices of fresh lemon
- 4 sprigs of fresh rosemary
- Lemon pepper seasoning
Instructions
- Preheat oven to 400° F.
- Chop broccoli into nice-sized florets.
- Lightly coat or spray a 12" by 12" foil sheet with olive or coconut oil.
- Season both sides of the chicken with lemon pepper seasoning and place on foil sheet.
- Add a few broccoli florets to each packet.
- Add a sprig of rosemary.
- Add more lemon pepper seasoning to taste.
- Add a lemon slice on top of the chicken.
- Do this for all 4 chicken breasts.
- Tightly wrap each foil packet.
- Place on cookie sheet.
- Bake for 20 minutes or until the chicken reaches 160° F.
- Remove from oven and let it rest for about 5 minutes.
